Vegetable and prawn fried rice

This dish accompanies the oriental baked fish beautifully!!


Serves 2

5 points per serve


1 tsp Peanut oil
2 cups of cooked rice (I always make a big batch and then once it's cool I weigh it in to resealable bags and write on the weight and then bung it in the freezer - it just makes it easier to calculate the points)
1 spring onion, sliced
2 mushrooms, diced
1 carrot, diced
1 zucchini, diced
handful of brocolli, cut into small florets
4 asparagus spears, cut into 3-4 cm pieces (or you could use green beans)
8 large cooked prawns, cut into small pieces (not too small otherwise they'll fall apart)
1 clove of garlic, finely chopped
1 1/2 tsp chinese five spice

soy sauce
1 1/2 tsp fish sauce



Heat oil in a wok or large frying pan. Add all veggies and garlic and stir fry for 5 minutes, sprinkle over the five spice and mix thouroughly. Add soy sauce, fish sauce, prawns and rice and stir fry to mix together. Cook until to your liking. You can always add more of the fish sauce, soy sauce or chinese five spice and it won't affect the points value.
