This is one of our favourites at the moment.
Serves 2
2 1/2 points per serve.
200g White fish fillet (I use hake at the moment)
1/2 capsicum, sliced
handful of cherry tomatoes, halved
1/2 onion, sliced
glug of soy sauce
Preheat the oven to 200c.
Place the capsicum, onion and tomatoes in a bowl and drizzle the soy sauce over. Let it marinade for 30 minutes or so.
Cut a piece of aluminium foil per serving (large enough to put the fish in and fold over to make a parcel). Spoon half the capsicum mixture on the one piece of foil on the edge furthest away from you. (Make sure you include some of the soy sauce too)
Place a fish fillet on top of the mixture, season with salt and pepper and fold over to make a tight parcel. Repeat with the other. Place on a baking tray and pop in the oven for 20 minutes.
I always serve this with veggie and prawn fried rice and stir fry vegetables on the side.
