This is a really quick and easy curry dish. I always find that if I marinate the chicken in lemon juice and salt and pop it in the fridge for 30 minutes, it's always tender and flavoursome.
Serves 4
3 points per serve
4 large onions, finely chopped
4 garlic cloves, crushed
4 x 140g chicken breast, cut in to bitesize pieces
handful of fresh coriander, finely chopped
spray oil
2 tbsp medium curry powder
1tbsp garam masala
2 tsp ground cinnamon
2 tsp ground cumin
salt & freshly ground pepper
400ml chicken stock
400g chopped tomatoes
Spray a large frying pan. Cook spices over a low heat for 30 seconds. Add the onions and saute 3-4 minutes. (if the onions look like they are burning, just add a little water). Add the garlic and chicken and season well.
Add stock and chopped tomatoes and bring to the boil. Reduce the heat to medium-low and cook for 30 minutes, or until the chicken is cooked through, stirring occasionally
