Burger with beetroot relish


Serves 4

4 points per serve

400g extra lean beef mince
1 onion finely chopped
3/4 cup fresh breadcrumbs
1 tbsp parsley, chopped
1 tbsp worcestershire sauce
1 egg white, lightly whisked
lettuce leaves
tomato
white bread roll, halved and toasted

Fry the onion in spray oil. Mix all other ingrediants together and add the onion once it is cooled. Form in to burger shapes and pop in the fridge. Spray a pan with oil and cook. Use one half of the toasted bap, add burger, lettuce leaves, tomato and any other salad and top with the beetroot relish.
Beetroot relish
Grate 2 beetroots and place in a pan with `1/4 cup red wine vinegar, 1/4 cup water, 1 tbsp brown sugar and simmer for 15 minutes.
