Lime Cheesecake



This is a recipe from my Mum which I have adapted.

Serves 8

3.5 points per serve.

20 Arnotts Malt O Milk biscuits
2 tbsp flora light
Juice of 2 limes
300g Philadelphia Extra Light Cream Cheese
200ml Carnation Light and Creamy evaporated milk
1 portion lite lime jelly powder
Melt flora light in a pan. Put biscuits in a resealable bag and bash with a rolling pin. In a bowl, pour the biscuit crumbs in and add the melted flora. Stir well. Using an 8" cake tin with removavle bottom, spread the biscuit mixture on the bottom and pop in the fridge. Meanwhile, in a bowl whisk up the remaining ingrediants until smooth.
Get the biscuit mixture out of fridge and pour mixture on top. Spread until even. Pop in the fridge to set.
