Char Sui Pork, prawn and vegetable fried rice


Serves 4

3.5 points per serve
1 pork loin chop (any fat removed)
1 tbsp char sui sauce
100g cooked smallish prawns
onion, diced
mushroom, diced
fresh spinach, wilted (proudly grown in our garden!)
capsicum, diced
small amount of eggplant diced and already fried in spray
2 cups cooked rice
1 tbsp Soy sauce
1 tbsp Fish sauce

Marinade the pork in the char sui sauce for a few hours and then bake in the oven. I popped it in at 180c for about 20 mins, turning half way. Mmmmmmmmmmm the smell!!!!!!!

Chop the prawns in to small pieces.

Spray a wok or stir fry pan with oil and add onions, add a little water so it doesn't stick. Add the other veggies (apart from spinach) Then add rice with another spray of oil. If you have points spare you could add sesame oil. Add soy sauce and fish sauce. Stir. Add pork and prawn.

You could add a beaten egg too. Move everything to one side in the pan and pour in the beaten egg, stir it so it doesn't stick and forms like an omelette, then take it out and cut it up. Add it to the final dish .
