Beef Filo Pie



Weight Watchers Beef Filo Pie



Serves 4 8 ProPoints per serve



(recipe taken from the June 2011 mag)





1 tbsp olive oil
1 small onion chopped
2 garlic cloves crushed
400g lean beef mince
2tsp moroccan seasoning
2 medium zucchini chopped
1 medium eggplant chopped
100g spinach chopped
6 sheets of filo pastry


2 medium tomatoes, cut into wedges
1/2 small red onion
1/4 cup coriander
2 tsp lemon juice



Preheat oven to 200c or 180c fan forced. Add half of the oil to a hot pan and cooke the onion for 5 minutes. Add the garlic and moroccan seasoning. Add the mince and cook, chopping up any large pieces with a wooden spoon. Add the zucchini and eggplant and cook for 10 minutes. Add the spinach and cook until just wilted. (I also added a few chopped mushrooms) Allow meat mixture to cool.


Lay 1 sheet of filo out and spray with oil and then add another on top. Continue until you have used all sheets. Place the pastry onto a baking sheet that's been sprayed with oil. Add the cooled meat mixture to the middle of the pastry and gather the sides up and kind of scrunch it up in the middle so that it's sealed. Bang it in the oven for 15 mins. Meanwhile, mix all the other ingredients together and serve with the pie.
