Tomato and Basil Dressing

This is a delicious dressing good on pasta, drizzled over steamed veggies or on leafy salads.

Serves 2.

2 ripe tomatoes (the riper, the tastier)
1/2 small garlic clove, crushed
6 large basil leaves, shredded
1/2 tsp red wine vinegar (you could use white wine vinegar)
1/2 tsp tomato paste
salt and freshly ground pepper

Cut a cross in the base of each tomato and place in a bowl of boiling water. Make sure they are covered with the water. Leave to stand for about 1 minute, or until the skins loosen

Drain the tomatoes and peel off the skins. Roughly chop the flesh and the seeds.

Place in a blender with the remaining ingrediants and whiz to a smooth puree. Add a little cold water to thin the dressing down.
