This is one of Nigel's creations and can be done on the bbq plate or a frying pan. It's one of our weekend favourites and particularly nice cooked for me on a Saturday morning when I'm back from the gym!
Serves 1
4 1/2 points
1 piece of bread
spray oil
1 egg
2 rashers lean bacon
spoonful of tinned plum tomatoes
Spray bbq plate with oil. With a cookie cutter, cut a shape out of the middle of the bread and place on the bbq plate. (Don't forget to put the shape on the plate to toast too). Crack open an egg in the hole. Turn over when ready to cook the other side. Meanwhile bbq the bacon and heat up the tomatoes.
