Mushroom Bhaji

Serves 4

280g mushrooms
spray oil
1 onion, finely chopped
1 fresh green chilli, finely chopped
2 tsp garlic puree
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp chilli powder
1/2 tsp salt
1 tbsp tomato puree
3 tbsp water
1 tbsp snipped fresh chives


Wipe mushies with damp kitchen paper and thickly slice.

Spray oil in a pan over a medium heat. Add onion and chilli and cook, stirring frequently for 5-6 mins until the onion is soft but not brown. Add garlic puree and cook for 2 mins.

Add cumin, coriander and chill powder, stirring for 1 min. Add mushies, salt and tomato puree and stir until all blended.

Sprinkle water evenly over the mushrooms and reduce the heat to low. Cover and cook for 10 mins stirring halfway through. The sauce should have thickened. Transfer to serving dish and serve.
